ITALIAN OLIVE OIL CAKE WITH LEMON

LEMON JUICE

3 T

2/3 c

salt

1 t

SUGAR

1/3 c

OLIVE OIL

1 1/2 t

VANILLA

1 T

LEMON ZEST

BAKING POWDER

Step 1

Grease a 9 inch cake pan with butter and sprinkle it with flour.

Step 2

Beat sugar and eggs for 1-2 minutes until pale yellow an shiny.

Step 3

Slowly drizzle in olive oil and vanilla and then mix in lemon juice and zest.

Step 4

Sift together the dry ingredients and mix them to the batter.

Pour the batter into the prepared cake pan.

Step 6

Bake at 350˚for 25-30 minutes until golden brown.

Step 7

Let cool for 15 minutes and then serve sprinkled with powdered sugar and fresh berries, if desired.
