ITALIAN PASTINA WITH CRISPY PROSCIUTTO

Ingredients

2 oz

prosciutto

4 1/2 c

PASTINA

CHICKEN BROTH

12 oz

1/2 c

parmesan 

1/2 tsp

black pepper

Step 1

Rip prosciutto into small pieces and crisp in a pot over medium heat on the stovetop. Remove from pot.

Step 2

Add chicken broth and bring to a boil. Cook pastina for 6-7 minutes until al dente.

Step 3

Remove pastina off heat and whisk 1/2 cup into the beaten eggs.

Step 4

Mix the egg mixture back into the hot pastina until creamy.

Step 5

Mix in parmesan cheese and black pepper.

Step 6

Serve hot with crispy prosciutto on top.
