Combine 15 oz. ricotta cheese, 1 T. olive oil, juice and zest of 1 lemon, 1/2 tsp. salt and 1/4 tsp. pepper
Whip ingredients together with a hand mixer for 2-3 minutes till light and fluffy
Slice baguette and brush with olive oil, then season with salt & pepper
Grill for 2-3 minutes on each side till lightly toasted
Serve ricotta spread with slices of grilled baguette
