When I saw a version of this cheesy French onion pasta recipe go viral on Tiktok, I knew immediately I had to try it. I mean, I love pasta and I adore French onion soup, so I knew this would be right up my alley.
It’s sweet, caramelized onions and perfectly cooked pasta swimming in a seasoned cheesy, creamy sauce. And the flavor of this dish is so amazing you won’t believe how simple it is to make!

Cook your pasta in salted, boiling water according to the package directions until it is al dente.
While the pasta cooks, heat a large skillet over medium heat and add the butter. Once the butter melts and the pan is hot, add the onions, salt, pepper, and vinegar. Stir or toss to combine.
When the pasta has finished cooking, drain it and set it aside.
While the pasta is cooking, saute the onions, stirring frequently, for 12-15 minutes until they are a deep golden brown color. They should be softened but still have a slight bite to them.
Add the fresh thyme leaves and continue to saute for 1 minute. Deglaze the pan by adding the beef stock and scraping the bottom of the pan to remove any stuck-on bits.
Add the heavy cream and gruyere cheese to the sauce and remove the pan from the heat.
Stir the sauce until the cheese is melted and then toss with the drained pasta. Serve with some extra gruyere cheese on top, if you like.
