These Cheesy Bacon Ranch Potatoes are a comforting, flavorful side dish made with crispy roasted potatoes, salty bacon pieces, melted Colby Jack cheese, and a drizzle of ranch dressing.

Potatoes in all forms are the ultimate side dish. Whether I'm serving Cheesy Mashed Potatoes, Au Gratin Potatoes, or Smashed Potatoes with Blue Cheese, I know they're going to be a hit! These Cheesy Bacon Ranch Potatoes are a new family favorite!

Topped with melty cheese and crispy bacon, they are crispy on the outside, creamy on the inside, and full of savory flavor. Even better, all you need is 20 minutes of prep time, and the oven does the heavy lifting. Pair them with all your favorite main dishes for a hearty dinner that everyone will love!

What You Need to Make Oven-Roasted Potatoes with Cheese and Bacon

Below is an overview of the ingredients you'll need. Make sure to read my notes about substitutions and important tips below! 

Red potatoes, Colby, jack cheese, seasoning, onions, bacon, and ranch dressing.
  • Bacon - I love the savory, smokey flavor that bacon adds to this dish. I use regular pork bacon, but turkey bacon will also work. You can use pre-cooked varieties or cook the bacon on your own. Cook until it's slightly crispy, so it doesn't get overdone when you put it under the broiler later.
  • Potatoes - I tested this recipe with various types of potatoes, but red was the clear winner.  They have a slightly sweet flavor and firmer texture that holds up well to roasting. If you prefer a more buttery flavor, use yellow potatoes or swap for russet for a slightly earthier taste. 
  • Cheese - When I tested this recipe, the mild flavor and super melty texture of Cache Valley® Colby Jack cheese was my favorite. However, pepper jack and sharp cheddar were the runners-up. Use pepper jack if you love a bit of a spicy kick, or opt for sharp cheddar for a stronger, tangier taste. 

How to Make Baked Cheesy Ranch Potatoes with Bacon

Prepare the Potatoes - Toss the potato cubes and onions with vegetable oil and seasonings and spread the mixture in a single layer on a sheet pan.

Roast until the potatoes are tender and browned. Tossing the mixture halfway through ensures they are browned evenly on all sides.

Top - Sprinkle the roasted potato and onion mixture with chopped bacon and shredded cheese.

Then, switch the oven to broil and return the sheet pan to the oven until the cheese is melted and bubbly. (Don't forget to keep a close eye on the oven so it doesn't burn.) 

Serve - Drizzle the cheesy potatoes with ranch dressing and enjoy!

Kitchen Time Saver

While cooking the bacon for the potatoes, you can cut the potatoes and onions. Then, chop the bacon strips and shred the cheese while the potatoes roast.

Frequently Asked Questions

Can I add meat to these potatoes? 

Yes! Add cooked chicken, pulled pork, or leftover pot roast to turn this side dish into a complete meal. I recommend adding it when you add the bacon. Then, sprinkle the cheese over the top to get the ultimate melt factor. 

How do I reheat leftover potatoes without them getting soggy? 

I recommend reheating leftovers in a baking dish in the oven until warm. Cover the dish in foil if the top begins to brown too quickly. If you want them extra crispy, flip on the broiler at the end!

Do I need to peel the potatoes first? 

The potatoes don't need to be peeled beforehand. I prefer to leave the skin on for a crispier texture, but it's up to you!

Ingredients
  

  • 2 pounds red potatoes
  • ½ medium yellow onion
  • 3 Tablespoons vegetable oil
  • 1 ½ teaspoons dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¾ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 6 ounces bacon, cooked and chopped
  • 4 ounces Cache Valley® Colby Jack cheese, shredded
  • ⅓ cup ranch dressing

Instructions
 

  • Preheat the oven to 375°F.
  • Cut the potatoes and onion into 1 ½ to 2-inch cubes.
  • Toss the potatoes and onions with vegetable oil, dried parsley, garlic powder, onion powder, kosher salt, and black pepper in a large bowl until evenly coated. Spread them out on a sheet pan in a single layer.
  • Roast the potatoes and onions for 45 minutes, tossing them halfway through for even browning.
  • Sprinkle the chopped bacon and shredded cheese evenly over the top. Switch the oven to broil and return the sheet pan to the oven for 2 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and drizzle with ranch dressing before serving.

Notes

  • Potatoes - Use yellow potatoes for a more buttery flavor or russet for a more earthy taste.
  • Cheese - Use pepper jack cheese for a kick or cheddar for a more tangy flavor.
