This Cold Buffalo Chicken Dip is an easy make-ahead appetizer for game day or family get-togethers. Made from scratch with spicy buffalo sauce, sharp blue cheese, and creamy ranch dressing.

This Easy No-Bake Buffalo Chicken Dip is served cold or at room temperature. Serve it alongside other game day snacks like Cheesy Roast Beef Sliders, Italian Meat and Cheese Stromboli, or my Crispy Garlic Parmesan Chicken Wings.

🌶 Ingredients for No-Bake Buffalo Chicken Dip

chicken, broth, green onions, blue cheese, ranch, sour cream, seasoning, cream cheese and hot sauce.
  • Chicken - If you are short on time, instead of cooking the chicken in stock, grab a rotisserie chicken to use instead.
  • Blue Cheese - This classic cheese is commonly paired with buffalo sauce, but not everyone loves it. It adds a sharp kick to the flavor of this dip but can be omitted.
  • Hot Sauce - Any buffalo wing sauce will work for this recipe, but my favorite is Frank's Red Hot!

👩🏻‍🍳 How to Make Buffalo Chicken Dip

Cook the Chicken - First, add the chicken to a pot with the chicken stock or broth. Cover and cook for 15-20 minutes until the chicken is cooked to an internal temperature of 165˚F. (This timing will depend on how big the pieces of chicken are, so use a kitchen thermometer to ensure it's cooked all the way.)

Shred the Chicken - Use two forks or a mixer to shred the chicken into smaller pieces and then let it cool in the refrigerator.

Mix the Dip - Combine the shredded chicken in a large mixing bowl with the cream cheese, sour cream, ranch dressing, hot sauce, blue cheese, sliced green onions, garlic powder, and onion powder. Mix everything well so that all of the ingredients are combined.

Chill the Dip - Cover the bowl and refrigerate for at least an hour or overnight for best results. (This gives time for all the flavors to meld together!)

Serve your buffalo chicken dip with celery, carrots, crackers, or chips! I personally love using my Homemade Bagel Chips.

Ingredients
  

  • 1 ½ pounds chicken breast, boneless, skinless, or 3 cups of shredded rotisserie chicken
  • 1 quart chicken stock
  • 8 ounces cream cheese, room temperature
  • ½ cup sour cream
  • ¼ cup ranch dressing
  • ⅓ cup buffalo sauce
  • ¼ cup blue cheese crumbles, plus extra for garnish
  • ⅓ cup sliced green onions, (approximately 4-5), plus extra for garnish
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions
 

  • Add the chicken breast to a medium-sized pot with the chicken stock. Cover and bring to a boil over medium-high heat on the stovetop. Cook for 15-20 minutes until the chicken reaches an internal temperature of 165˚F.
  • Remove the chicken and place it in a large mixing bowl. Use two forks or a hand mixer to shred the chicken into smaller pieces. Place the chicken in the refrigerator to cool completely.
  • After the chicken cools, add the cream cheese, sour cream, ranch dressing, buffalo sauce, blue cheese, green onions, garlic powder, and onion powder. Mix until all of the ingredients are well combined.
  • Chill the dip in the refrigerator for at least an hour or overnight for best results. Serve garnished with extra blue cheese and green onions alongside celery, carrots, chips, or crackers for dipping.
