This BBQ Chicken Stuffed Sweet Potatoes Recipe is sweet, savory, cheesy, and perfect for weeknight dinners, game days, or meal prep. Made with four simple ingredients, the potatoes are ready to eat in less than 15 minutes and are delicious when paired with a variety of toppings!

I often make a batch of plain shredded chicken or Slow Cooker Pulled Chicken with Jalapeño at the beginning of the week to use in recipes like my Sour Cream White Chicken Enchiladas, Loaded Shredded Chicken Nachos, or these stuffed sweet potatoes. 

High-protein, full of fiber, and full of sweet and savory flavors, these potatoes are my go-to on busy weeknights when I just don't have time to cook. Not only are they quick and foolproof to prepare, but my girls love them and request them frequently. I often set out a toppings bar so everyone can make the potatoes their own, and I never have any leftovers!

Ingredients to make BBQ chicken stuffed sweet potatoes.
  • Sweet Potatoes - I look for large, equal-sized sweet potatoes for easy stuffing. I've also made this recipe with Russet potatoes, and they work well for a slightly more savory flavor. 
  • Shredded Chicken - I use leftover shredded chicken I have on hand, or I pick up a rotisserie chicken from my local grocery store. 
  • BBQ Sauce - I like plain barbecue sauce, but any homemade or store-bought variety tastes great. 
  • Cache Valley® Sharp Cheddar Cheese- I love the flavor contrast of the sharp cheese with the sweet, tangy BBQ sauce, and the finely shredded texture melts easily, creating a gooey topping.

Possible Variations and Topping Ideas

  • Protein - Swap the rotisserie chicken for shredded BBQ pork, pulled turkey, ground chicken, or even black beans and corn for a vegetarian-friendly option.
  • Cheese - Replace the sharp cheddar cheese with cheddar & Monterey Jack, Colby Jack, four cheese Mexican blend, Swiss, or Italian cheese for a slightly different flavor profile. 
  • Veggies - Add shredded cabbage, creamy coleslaw, diced tomatoes, sautéed bell peppers, spinach, corn salsa, avocado slices, or fresh cilantro for extra texture, freshness, and color.
  • Smoky Chipotle - Use a chipotle-style BBQ sauce, and finish with smoked gouda, crispy bacon bits, avocado or guacamole, and fresh cilantro for a bold, smoky twist.
  • Carolina Style - Use a mustard-based BBQ sauce, top the potatoes with Colby Jack cheese, creamy coleslaw, and sliced dill pickles for a tangy Southern-inspired variation.
  • Buffalo Chicken - Replace the BBQ sauce with buffalo sauce, top the potatoes with mozzarella or blue cheese crumbles, and finish with ranch or blue cheese dressing and sliced chives.
  • Hawaiian-Inspired - Add diced pineapple and red onion to the BBQ chicken, use mozzarella or white cheddar, and finish with fresh cilantro and a squeeze of lime juice.
  • Crunch - Sprinkle crispy fried onions, tortilla strips, or crushed kettle chips over the top just before serving for added texture.
  • Spice - Toss the chicken with a dash of chili powder and BBQ sauce. Or, add sliced jalapeños, pickled red onions, crushed red pepper flakes, or a drizzle of hot honey or hot sauce for a little extra heat.
  • Sauce - Finish with sour cream, Greek yogurt, chipotle crema, extra BBQ sauce, or a drizzle of queso for even more flavor.

How to Make BBQ Chicken Stuffed Sweet Potatoes

Prepare the potatoes - Bake or microwave the sweet potatoes until they're fork-tender. Then, slice them in half lengthwise, and gently press the ends to open them up. 

Combine the filling - Toss the shredded chicken and BBQ sauce in a bowl, stirring to coat the chicken completely.

Layer - Divide the chicken mixture evenly among the potatoes, and sprinkle cheese on top. 

Melt the cheese - Broil or microwave the potatoes to melt the cheese. 

Serve - Garnish with optional garnishes, such as pickled red onions and sliced jalapeños, and enjoy warm!

Amanda's Expert Tips

  • Choose similar-sized potatoes - Try to pick sweet potatoes that are similar in size so they cook evenly and finish at the same time. 
  • Crisp the skins - For extra texture, brush the outsides of the potatoes lightly with oil, and bake at 400-425°F instead of microwaving. This creates a crispy exterior that adds a nice crunch and helps the potatoes hold up well to the fillings.
  • Fluff the filling - Use a fork to gently fluff the potato flesh inside the skin before adding the fillings. 
  • Warm the filling - Make sure your BBQ chicken mixture is warm before adding it to the potatoes. This helps the cheese melt quickly and evenly. 
  • Broil carefully - Keep a close eye on your potatoes as they broil to prevent burning. The cheese can go from perfectly melty to brown in what feels like seconds.

How to Store

For the best results, I recommend storing the potatoes and BBQ chicken separately, if possible. The assembled potatoes or individual components will keep fresh in an airtight container in the fridge for up to 4 days. You can also freeze the BBQ chicken filling for up to 2 months! 

To serve, thaw frozen chicken in the fridge overnight. Then assemble the potatoes, and reheat them in the microwave or in the oven at 350°F or air fryer for 10-15 minutes or until they're warmed through and the cheese is melted.

Instructions
 

  • Bake or microwave the sweet potatoes until fork-tender.
  • Slice each sweet potato open lengthwise and gently press the ends to open it up.
  • In a small bowl, combine the shredded chicken and BBQ sauce, stirring to coat.
  • Divide the BBQ chicken mixture evenly among the sweet potatoes and top with cheese.
