Our family loves hanging out in the backyard when the weather is warm while the kids play and we cook dinner on the grill. These buffalo chicken burgers are some of the tastiest burgers you will ever eat and are perfect for outdoor grilling.

- Butter Stuffing - The butter stuffed inside these buffalo chicken burgers is a compound butter infused with hot sauce and blue cheese. As the burgers cook, the butter melts to both infuse flavor and make for a super juicy burger.
- Ground chicken - I recommend using ground chicken as opposed to ground chicken breast. It uses both dark and light meat so the fat content is a little bit higher. This will help your burger stick together well, but also help make a juicy burger.

🔪 Step by step instructions
First, mix together the hot sauce with the butter and blue cheese. Place the mixture on a piece of plastic wrap and roll it up tightly into a cylinder. Place the butter in the freezer for at least 20 minutes to solidify.
Combine the ground chicken, hot sauce, celery salt, garlic powder, and pepper in a mixing bowl. Mix together to evenly distribute the sauce and spices through the meat.
Slice the butter into four pieces and divide the meat mixture into four pieces. Place a slice of the butter in the middle of one piece of meat mixture. Wrap the meat around the butter to completely enclose it. Lightly flatten the meat to form a burger patty and place the patties in the freezer to chill for 15 minutes while you prep the grill.
While the burgers are chilling, preheat the grill and grease the grill grates. Cook buffalo chicken burgers for about 14-17 minutes, flipping halfway through until the internal temperature reads 165˚ when checked with a kitchen thermometer (affiliate link). Ingredients

- ⅓ cup blue cheese crumbles

- 1 ½ pounds ground chicken
- 2 Tablespoons hot sauce (affiliate link)
- 1 teaspoon celery salt
- ½ teaspoon garlic powder
- ½ teaspoon ground black pepper

- 4 slices pepper jack cheese
- 4 burger buns
- 4 romaine lettuce leafs
Instructions
Compound Butter
- Combine hot sauce, softened butter, and blue cheese in a small bowl. Mix everything together until everything is thoroughly combined.
- Place butter mixture on a small piece of plastic wrap or wax paper and roll up tightly into a cylinder that is approximately 4 inches long and 2 inches in diameter. Place butter in the freezer for at least 20 minutes to solidify it.
Chicken Burgers
- Mix together ground chicken, hot sauce, celery salt, garlic powder, and black pepper in a mixing bowl (affiliate link).
- Slice compound butter into four equal pieces that approximately one inch thick. Divide the meat mixture into four equal pieces and place one slice of the butter inside a piece of the ground meat mixture. Wrap the meat around the butter slice pressing lightly so the butter is encased completely in the middle of the meat. Slightly flatten the meat into a burger patty.
- Place uncooked burgers on a plate or platter in the freezer for 15 minutes to chill while the grill is prepared.
- While burgers are chilling, preheat the grill to high heat or approximately 400˚. When the grill has been preheated, generously grease grill grates by rubbing them with a paper towel with vegetable oil on it. This will help prevent the burgers from sticking.
- Remove the burgers from the freezer and place them on the preheated and oiled grill. Cook 7-8 minutes until they are browned. Flip and cook an additional 8-10 minutes or until the internal temperature of the burger reaches 165˚ when checked with a kitchen thermometer (affiliate link).
- Baste burgers with extra hot sauce and top each with a slice of pepper jack cheese.
- Remove burgers from the grill and allow them to rest. While the burgers are resting, place the burger buns on the grill and allow to toast for 1-2 minutes until lightly browned.
