Roasting tomatoes deepens their natural sweetness. This makes the perfect pair with the savory flavors of herbs and garlic in this recipe.
This oven roasted cherry tomato recipe is a quick and easy dish that enhances the delicious flavors of these sweet tomatoes. They can then be used as a delicious side dish or as a topping for pasta dishes or meat. One of my favorite ways to serve these little flavor bombs is over sliced pieces of really good crusty Italian bread.

- Tomatoes - Cherry tomatoes are a small tomato variety that are shaped like a cherry. They are in season from early summer to late Fall and are readily available at the grocery store or your local farmer's market. Grape tomatoes can be used as an alternative as well.
- Herbs - Chopped fresh oregano and fresh basil and roasted with the tomatoes. Dried herbs or Italian seasoning will work as a substitute, but reduce the quantity by half.

🥣 Step by step instructions
First, toss the cherry tomatoes in a bowl with the extra virgin olive oil, minced fresh garlic cloves, chopped fresh herbs as well as the sea salt and black pepper. Spread the seasoned tomatoes on a rimmed baking sheet lined with parchment paper in a single layer.
Roast tomatoes in a preheated oven for about 15-20 minutes until they start to shrivel. Cool tomatoes to room temperature and serve over pasta, meat, in soups, or with bread.

- 20 ounces cherry tomatoes
- 4 teaspoons extra virgin olive oil
- 4-6 cloves minced fresh garlic
- 2 Tablespoons chopped fresh basil
- 2 Tablespoon chopped fresh oregano
- ¾ teaspoon fine sea salt

Instructions
- Preheat the oven to 375˚ and line a rimmed baking sheet (affiliate link) with parchment paper (affiliate link).
- Combine tomatoes, olive oil, garlic, basil, oregano, salt, and pepper in a large bowl (affiliate link).
- Toss to coat the tomatoes with all of the seasonings and then spread them onto the prepared sheet pan in an even layer.
