These oven roasted cherry tomatoes are a great way to use up fresh tomatoes. In just 30 minutes, a few simple ingredients are transformed into a versatile side dish, appetizer, or topping for pasta.

Fresh cherry tomatoes during Summer time are one of my favorite things to eat. They are at their peak of flavor during summer and can be great in so many different dishes. Roasting tomatoes deepens their natural sweetness. This makes the perfect pair with the savory flavors of herbs and garlic in this recipe.

This oven roasted cherry tomato recipe is a quick and easy dish that enhances the delicious flavors of these sweet tomatoes. They can then be used as a delicious side dish or as a topping for pasta dishes or meat. One of my favorite ways to serve these little flavor bombs is over sliced pieces of really good crusty Italian bread.

Try these oven-roasted tomatoes over fresh homemade pasta along with melon prosciutto caprese salad and grilled broccolini.

🍅 Ingredient notes

cherry tomatoes, salt, oil, fresh thyme, fresh basil, pepper and garlic.
  • Tomatoes - Cherry tomatoes are a small tomato variety that are shaped like a cherry. They are in season from early summer to late Fall and are readily available at the grocery store or your local farmer's market. Grape tomatoes can be used as an alternative as well.
  • Herbs - Chopped fresh oregano and fresh basil and roasted with the tomatoes. Dried herbs or Italian seasoning will work as a substitute, but reduce the quantity by half.

📋 Substitutions and variations

  • Spicy - Add crushed red pepper flakes to the seasoning for a more spicy version of these oven-roasted cherry tomatoes.
  • Toppings - Other toppings can be added after roasting and cooling the tomatoes. A drizzle of balsamic vinegar or a sprinkle of feta or parmesan cheese would be delicious.

🥣 Step by step instructions

First, toss the cherry tomatoes in a bowl with the extra virgin olive oil, minced fresh garlic cloves, chopped fresh herbs as well as the sea salt and black pepper. Spread the seasoned tomatoes on a rimmed baking sheet lined with parchment paper in a single layer.

fresh cherry tomatoes in a bowl with seasonings and herbs and spread on a sheet pan.

Roast tomatoes in a preheated oven for about 15-20 minutes until they start to shrivel. Cool tomatoes to room temperature and serve over pasta, meat, in soups, or with bread.

⭐ Expert tips

  • Toss the tomatoes in a bowl with the oil and seasonings first and coat evenly.
  • Spread the tomatoes out in an even layer on the sheet pan or in a baking dish with space in between them to ensure even roasting.
  • Let the tomatoes cool slightly before serving them so they retain some of their juices.

⏲️ Make ahead and storage instructions

These oven roasted cherry tomatoes are the perfect make-ahead dish. They can be stored in an airtight container in the refrigerator for 3-5 days and in a freezer bag in the freezer for up to 3 months. Frozen tomatoes will break down after defrosting, so they are best for a sauce for pasta or as an addition to soup.
