This rossini cocktail is an easy two ingredient drink made with just fresh strawberry puree and bubbly prosecco. This light and fresh Italian cocktail is perfect for valentine's day, Summer brunch or mother's day.

The rossini cocktail is named after the famous Italian composer, Gioachino Rossini, and is very similar to a bellini cocktail. A classic bellini is made with peach puree, whereas a rossini is made with strawberry puree.

It's the perfect drink to enjoy on a hot summer day or for brunch! It's a light, refreshing drink made with just a few simple things.

Serve this delicious cocktail alongside a creamy mushroom risotto for Valentine's Day, with a hashbrown quiche for Mother's Day, or even with a slice of lemon olive oil cake for a fun date night dessert!

  • Prosecco - Prosecco is an Italian sparkling wine similar to champagne. Use, champagne, sparkling white wine, or sparkling rosé for a different variety. For a sweeter version of this drink, try using a sweet or fruity sparkling wine.

📋 Substitutions and variations

  • For a crowd - Scale this cocktail up for a crowd! Serve the puree in a small pitcher next to the bottles of chilled prosecco and let guests make their own.
  • Berries - For a different flavor, use raspberries or blueberries, or use them in combination with the strawberries.
  • Non-Alcoholic - Substitute the prosecco for club soda or strawberry-flavored sparkling water.

🍾 Step by step instructions

To make the fresh strawberry puree, blend the strawberries until liquified. Run the puree through a fine mesh strainer to remove any seeds.

Pour about ¼ cup of the puree into each champagne flute or wine glass and then fill the remainder of the glass with prosecco.

Garnish drinks with a fresh strawberry on the side of the glass or instead with a half strawberry floating on top.

⭐ Expert tips

  • Using fresh strawberry puree gives this drink a light fruity flavor that isn't overly sweet. Pre-made strawberry puree usually has sugar in it so it will make for a sweeter drink.
  • When adding the prosecco to the glass, pour it slowly, so it doesn't overflow.
  • If the puree and prosecco don't blend together, then the drink can be gently stirred to combine it.

Strawberry Rossini Cocktail Recipe with Prosecco

This rossini cocktail is an easy two ingredient drink made with fresh strawberry puree and bubbly prosecco. This light and fresh Italian cocktail is perfect for valentine's day, brunch or mother's day.

  • 1 pound strawberries, washed and dried with tops removed, plus extra for garnish (optional)
  • 1 bottle chilled prosecco, 750 ml

Instructions
 

  • Add prepared strawberries to a blender and puree until liquified.
  • Strain the puree through a fine mesh seive or strainer to remove any seeds or large clumps.
  • Pour approximately ¼ cup of the puree into each champagne flute or wine glass and then fill the remainder of the glass slowly with prosecco.
  • Garnish glasses with a fresh strawberry, if desired, and serve.

  • Prosecco - Champagne, sparkling white wine, or sparkling rosé can also be used. For a sweeter cocktail, try using sweet or fruity sparkling white wine as opposed to a more brut or dry variety.
