
This easy Skillet Lasagna Recipe combines Italian sausage, ricotta, Parmesan, mozzarella, a seasoned marinara sauce, and tender lasagna noodles. Layered in a single skillet and cooked quickly on the stove before being finished in the oven, it's a weeknight-friendly take on the classic Italian comfort food!

My Hearty Italian Lasagna and Creamy White Lasagna have always been two of my favorite foods. However, I don't always have the time to sauté, layer, and wait for everything to bake. So, on busy days, I speed things up with this lasagna skillet recipe instead.
Unlike traditional recipes, everything combines in a single pan and cooks mostly on the stovetop. As a result, prep time is minimal, and the cooking process is quick, allowing me to have dinner on the table in 30 minutes!

Key Ingredients and Notes
- Cheese - I use a combination of ricotta cheese, Parmesan, and mozzarella cheese for a creamy, melty texture with a delicious, sharp, salty taste. Provolone or Romano cheese are other Italian Cheeses that can also be added to the mix. I always recommend freshly grating your cheese for the best flavor and melt factor!
- Italian Sausage - I like using a mild Italian sausage for this recipe. I've also used spicy Italian sausage for a little extra kick.
- Chicken Stock - I almost always have homemade chicken stock on hand. However, if using store-bought stock or broth, I make sure to use low-sodium varieties so that I have more control over the flavor of the dish.
- Marinara Sauce - While any store-bought marinara sauce will work, I much prefer to use homemade marinara, finding it has a better flavor and is easy to adjust.
- Lasagna Noodles - I use regular lasagna noodles, breaking them into pieces so they fit into the skillet and cook evenly. To keep this lasagna skillet gluten-free, I substitute gluten-free lasagna noodles and adjust the cooking time as needed, finding they often cook a little faster.

How to Make a Skillet Lasagna Recipe
Brown the sausage - Heat oil in a cast-iron skillet over medium heat, and add the minced garlic and sausage. Cook until the sausage is browned and cooked through.
Deglaze the pan - Add chicken stock, and deglaze the pan, scraping up any browned bits from 4the bottom. Then, stir in the marinara sauce.
Cook the noodles - Break the lasagna noodles into pieces, and add them to the skillet, mixing to coat them in the sauce. Bring the liquid to a boil, then reduce the heat to medium-low and simmer until the noodles are al dente. No need to drain!

Mix the cheese - In the meantime, whisk the ricotta, Italian seasoning, garlic powder, kosher salt, and Parmesan cheese in a small bowl.
Broil - Dollop the ricotta mixture evenly over the skillet, and sprinkle mozzarella on top. Then, broil until the cheese is melted and lightly browned.

Serve - Let the lasagna skillet rest for at least five minutes, and enjoy warm as is or topped with basil leaves.

Possible Variations
- Veggies - Sauté kale, spinach, onions, mushrooms, bell peppers, or even zucchini with the sausage to infuse extra nutrients into the dish.
- Sausage - You can substitute the Italian sausage with ground pork, ground beef, or ground turkey if you like.
- Spice - Add a dash of red pepper flakes to the marinara sauce for a kick of heat.
Serving Suggestions
You can't have lasagna of any kind without a side of Cheesy Stuffed Garlic Bread Bites or Italian Herb Focaccia! Then, I like to add a veggie side such as an easy Italian Arugula Salad, Spinach Salad with Pears, Roasted Artichokes with Parmesan, or Sauteed Green Beans for a well-rounded meal.
How to Store
Leftovers will stay fresh covered in the baking dish or transferred to an airtight container in the fridge for up to 4 days. Or, transfer leftovers to the freezer for up to 2 months.
To serve, thaw the frozen lasagna skillet in the fridge overnight. Then, reheat in the microwave, covered in the oven, or in a large skillet over medium-high heat on the stove.

Ingredients
- 1 Tablespoon olive oil
- 3 garlic cloves, minced
- ½ pound mild Italian sausage
- 2 cups chicken stock
- 3 cups marinara sauce
- 12 lasagna noodles
- 1 cup ricotta cheese
- ½ teaspoon Italian seasoning
- ¼ teaspoon garlic powder
- ¼ teaspoon kosher salt
- ½ cup grated Parmesan cheese
- ½ cup shredded mozzarella cheese
Instructions
- Heat a 12-inch cast-iron skillet over medium heat and add the olive oil.
- Add the minced garlic and Italian sausage and cook for 3-5 minutes, until the sausage is browned and cooked through.
- Deglaze the pan with chicken stock, scraping up any browned bits from the bottom, then stir in the marinara sauce.
- Break the lasagna noodles into 2-3-inch pieces and add them to the skillet. Mix well to coat the noodles in the sauce.
- Bring the mixture to a boil, then reduce the heat to medium-low. Simmer uncovered for 10-12 minutes, stirring occasionally, until the noodles are al dente.
- While the noodles are cooking, mix the ricotta, Italian seasoning, garlic powder, kosher salt, and Parmesan cheese in a small bowl. Preheat the oven broiler.
- Once the noodles are cooked, dollop the ricotta mixture evenly over the top and sprinkle with mozzarella.
- Place the skillet under the broiler for 3-5 minutes, or until the cheese is melted and lightly browned.
- Let the lasagna rest for 5 minutes and then serve!
